Mutton Korma

Ingredients:

  • 1 kg Mutton
  • 1 Cup
  • 2 Onion (finely chopped)
  • 2 tbsp (Ginger paste)
  • 2 ¾ tbsp. (Garlic paste)
  • 1 tsp. Chili Powder
  • 1/2 cup Yogurt
  • Cinnamon, Cardamom, Bayleaf
  • 1 tsp Coriander Powder
  • Special Garam masala Powder
  • 2 tbspMaowa( grated)
  • ¼ cup milk
  • 1 tsp tomato sauce
  • Oil ( 1 cup or more)
  • Salt (to taste)
  • Sugar (to taste)

Garam Masala Powder Making

  • 1 tsp jeera/cumin
  • 1 tsp whole coriander,
  • 1 tsp black or white pepper,
  • 2 or 3 cardamoms,
  • 5 or 6 cloves,
  • 1/2 tsp mace/ joyetree and
  • 1 little piece of nutmeg.

Preparation:

  • At first fry ingredients of garam masala lightly in a pan and crush it into a smooth powder.
  • Marinate the meat with all the ingredients, except milk, salt, sugar, chopped onion, oil and maowa/khoya for at least 8 hours.
  • Now heat the oil in a pan and add the chopped onion.
  • Fry until golden brown.
  • Add the marinated mutton
  • Keep stirring and Cook well ( you can add a small amount of water if needed)
  • Keep doing that until the meat half tends.
  • Then add milk and the green chilies.
  • Now add mace grated and cardamom powder again.
  • Lastly, add little sugar and spread over the maowa/Khoya.]
  • Then turn the heat very low and let the korma cook for another 8 – 10 minutes
